Mother’s Day Brunch

For Mother’s Day this year, my best friend asked my dad to dedicate her baby. This family has been our best friends since before my sister was born, and my dad performed her wedding a few years ago. Since my dad is not currently pastoring a church, we decided to do the baby dedication in our living room on a beautiful Mother’s Day Sunday!

To celebrate the occasion, I asked my mom if I could take over brunch for the day. And I DID! And I loved it!!!

I made Martha Stewart’s Caramelized Leek Quiche.

But I changed the recipe by adding some bacon because I thought the men would be whiny about having to eat so much girly food.

I infused the bacon into the cream for the quiche. It turned out, uh, delicious.

I also made Better Homes and Gardens’ Overnight Waffles. These were also ridiculously good, a million times better than frozen but not quite as good as those waffle makers that hotel breakfasts have sometimes. (What? I’m a girl of refined tastes.)

I made blackberry syrup from scratch to accompany the waffles. Super easy, just cook down the berries and add sugar. SO worth it!

I also wanted to include something healthy and springy, so I made a Strawberry Spinach Salad. Oh yes. I could have eaten a huge bowl of this.
