In the spirit of Super Bowl fever, I decided to post a quick and easy recipe you can use for any gathering. Since most Super Bowl fare is greasy and heavy, I wanted to contribute something to my gathering that would be lighter in flavor and texture. I decided to go with Cucumber Spread, a recipe I inherited from my good friend Nikki.
You will need:
1 Yellow Onion
2 Tbsp Vinegar
2 Tbsp Sugar
2 Blocks Cream Cheese
Grate the cucumber and onion into a mesh strainer and then transfer the whole mess onto a clean dishcloth or paper towels to remove most of the moisture. Take some time to wipe your eyes because tears will be spilling down your cheeks.
Put the shredded cucumber and onion into a bowl and mix in vinegar and sugar. Refrigerate the mixture for one hour. Leave your kitchen because when you come back in, you will be overwhelmed with the smell of cucumber, which is crazy because who knew cucumber had such a strong smell!
After an hour, or longer if you’ve forgotten about it, mix the cucumber mess with the cream cheese. (It may help to microwave the cream cheese for 30 seconds or so to soften it up and make it easier to blend.) After everything is mixed up and strange looking, refrigerate it for an hour or so, until it is firmed up a bit.
My sister tried it and said, “It tastes like Spring,” which I tend to agree with. It is pretty darn delicious, and it does have a light “springy” flavor.
